In fact, you should probably make them on Christmas morning. They are easy to make so you can focus on presents and family time instead of cooking.

    Pour gingerbread chaffle batter into the center of the waffle iron. Close the waffle maker and let cook for 3-5 minutes or until waffle is golden brown and set. If using a mini waffle maker, only pour in half the batter.

    A chaffle is a keto waffle primarily made of cheese and egg.

    In this recipe, we use cream cheese instead of shredded cheese. The cream cheese will provide texture and stability to hold the keto waffle together. Plus it will give a creamy taste and decrease the eggy flavor from the egg.

    Waffle Makers for Chaffles

    You can use any waffle maker to make chaffles. The waffle maker by Dash is very popular as it is small and makes the perfect portion of chaffle. It will make two chaffles for one serving of batter.

    I also love using my Belgium waffle maker by Oster. It has adjustable heat so you can get your waffle maker really hot in order to crisp up the chaffle. Although, with cream cheese waffles, they don’t really get crisp. They remain a sponge like consistency like cake.

    If I am making a keto gingerbread house out of these chaffles, I like to the a four square burner waffle maker. This no mess waffle maker by Dash is my favorite.

    When pouring the batter to make chaffles, pour the chaffle batter in the center of the waffle iron and close it. You don’t need to try to spread out the waffle batter on your own since the batter will spread on it’s own as you close the waffle maker.

    You also don’t need to grease the waffle iron before cooking chaffles. The cheese in the chaffle has a lot of fat and it gets released when cooking which helps to keep the waffle from sticking to the waffle iron.

    In order to get the most authentic gingerbread flavor, we add the following ingredients rather than adding a gingerbread extract.

    • Cinnamon
    • Ginger
    • Allspice

    These four additions create the best gingerbread flavor in the waffles. The coffee is a surprising addition but it really contributes to the overall flavor. Just pour a splash of coffee in your batter.

    Chaffle Storage

    If you want to make up a bunch of chaffle, you can meal prep them because they can be frozen.

    When meal prepping chaffles, let the waffles cool completely after they are done cooking. Next, flash freeze each chaffle on a plate or pan in the freezer for 30 minutes. Once they are hard, you can store the waffles together in a freezer safe storage bag in the freezer.

    To heat from frozen, use a toaster, oven or toaster oven to heat through and crisp up.
